Cookin' Up a Storm

I spent practically the entire day in the kitchen with the radio turned up, an occasional dance in my step, and doing lots and lots of cooking. I put many meals in the freezer to make for easy meals for the weeks ahead. In all I made:

Pasta e Fagioli
Couscous Bean Paella
Veggie Bean Chili
Black Beans and Rice
Cajun Stuffed Peppers
Tofu Fried Rice
Ricotta Broccoli Pie
Tofu Balls
Spinach Ricotta Bowties
Tons of Pumpkin Pancakes
A Birthday Cake (for my dad's birthday tomorrow, not the freezer)
1 40-30-30 Energy Bar--as a test



I didn't buy enough broccoli for the broccoli tofu quiche, and I still plan to make several textured soy protein (works like ground beef) meals to round out the freezer.

Sure, Lindy. I got the recipe from allrecipes.com. Here's the link. I substitute half of the all purpose flour for whole wheat flour.
