When you are at a new (to us), funky restaurant in Santa Fe and see "Baked Potato Ice Cream" on the dessert menu, you just have to give it a shot. Here is Brishen's dessert. The baked potato is ice cream rolled in cocoa powder with cool whip masquerading as sour cream, frosting for butter, and dyed walnuts as chives. Brishen feels this is the best potato he ever had.
